Oyster Dinner

Oysters are not on everyone's list of edible items but I've liked them for as long as I can remember.

On a trip to visit my grandparents as a small child we stopped at the (original) Olympia Oyster House. My dad let me order oysters.

It wasn't something that we had often but occasionally my mother would pan fry oysters for dinner. I've found there is a better way than pan fried though we don't do it often as oysters are not on Marilyn's list of edible items.

Best to start with live oysters. OK, that is not really optional. If they are still in the shell but the shell is gapping open things can only go down hill from there. Live oysters only please.

Open the shell with an oyster knife. The linked website will also explain how.

Thinking about this a bit more after looking at the pictures and imagining getting emails back about injuries sustained, perhaps you should just go to the oyster store and buy some oysters on the half shell. Forget the live oyster paragraph.

Place the half shell oysters on a baking pan and then top with chopped garlic and shredded parmesan cheese.  Bake at 300° (<just a guess) until the cheese is melted and just begins to lightly brown on top.

Serve with focaccia bread pan toasted with rosemary and olive oil.
